Clean Red Thai Curry

You have to try my healthy Thai Red Curry recipe… it is super easy, quick and a total winner! I have mine with cauliflower as a low-carb option, or with rice as a post workout meal!

THAI RED CURRY

(3 portions)

  • 1 tsp coconut oil

  • 400g chicken breast chopped or prawns

  • 1 tin coconut milk

  • 1/2 cup red curry paste

  • 1 cup onion chopped

  • 1 cup sugar snap peas

  • 1 cup peppers chopped

  • 1 red chilli finely chopped 

You can add any other veg you like… I like to add a bit of broccoli

METHOD

  1. In a large nonstick pan, melt coconut oil in a medium heat.

  2. Chuck in chicken and cook for 3-5 minutes.

  3. Chuck in the peas, peppers, chilli and onions and cook for 2 minutes on a higher heat.

  4. Mix in the curry paste and cook for a further minute.

  5. Add in the coconut milk and stirfry for a further minute.

Dish up and munch up!

Save leftover portions for other meals in the week.

I really hope you like my Thai Curry, you can have it with monkfish and prawns too if your not a chicken fan… or just vegetables and tofu for those who don’t eat meat!
