Portobello Pizzas

Ingredients

  • 2 portobello mushroom caps
  • 1 handful grape tomatoes chopped/cubed
  • 30g cup fresh mozzarella chopped/cubed
  • 30g Grated Eat Lean Cheese
  • 1 tbs fresh basil finely chopped
  • 1 clove garlic minced
  • 1 tbs olive oil (+more to drizzle)
  • 1 tsp balsamic vinegar
  • 100g lean mince
  • 2 tbsp homemade tomato salsa (see sauces recipes)

Method

  1. Preheat oven to 200 degrees
  2. Place mushroom caps (face up) on non stick baking pan. Drizzle them with olive oil and season with salt and pepper.
  3. In a bowl, combine all of the rest of the ingredients.
  4. Cook just caps for 2-3 mins. Remove from oven.
  5. Add mixture and place back in the oven for 1-2 minutes. You can also grill the mushroom on a griddle pan, on your stovetop.
  6. Place the mince in a frying pan with the tomato salsa and fry till cooked
  7. Remove the mushrooms and add the cooked mince…. Enjoy!
