Ingredients

  • Olive oil spray – 6 tbsp rolled oats
  • 2 tbsp almond flour
  • 1/2 tsp ground cinnamon
  • 5 tsp natural sweetener
  • 2 tsp coconut oil – 2 tsp unsweetened plain almond milk – 4 oz low-fat cream
    cheese at room temperature
  • 3 tbsp raw honey
  • 1 egg
  • 1 egg white
  • 1 tsp pure vanilla extract
  • 1/2 tsp fresh lemon juice
  • 1/2 cup TotalGreek yogurt
  • 1 cup frozen berries

Method

  1. Preheat oven to 200 degrees and place a large tray quarter full of water in to warm and prepare 4 small pots by slightly oiling.
  2. In a blender add oats, almond flour, cinnamon and 1 tsp sweetener until ground. Add in a little milk and oil and pulse until bread crumb like.
  3. Evenly press mixture into the bottom of your 4 pots.
  4. Place in the oven and bake for 5-10 minutes.
  5. In a large bowl, beat cream cheese, honey and remaining natural sweetener with an electric hand mixer on medium speed until smooth and fluffy. Add egg and egg white, and beat until just combined. Add vanilla and lemon juice and beat until just combined. Add yogurt and beat just until combined.
  6. Pour the mixture evenly between the 4 pots. Gentle place pots in the pan of warm water with out splashing and leave to bake for 30-40 minutes.
  7. Remove from the oven and water tray and let cool for 30 minutes before touching.
  8. In a sauce pan, heat your frozen berries with 1 tbsp honey to make a topping. Once the pots are cool spoon a little berry topping on each and enjoy or save for later in the fridge!
