LYB coconut ginger balls

Ingredients

  • 25g coconut desiccated
  • 50g cashews
  • 100g oats
  • 60g vanilla protein powder
  • almond milk (a dash or as much needed)
  • 1/2 cup chopped fresh ginger
  • 1 tbsp lemon oil

 

 

Method

  1. Put 1/2 the coconut on tin foil and toast lightly in the oven for 5 mins
  2. mean while out the rest of the coconut in a blender with all the other ingredients and blend till smooth. You may need to add almond milk to loosen slightly
  3. put the mixture into a bowl and leave to harden slightly in the fridge for 10 mins. Make sure you have taken the toasted coconut out the oven too cool
  4. Take tbsp sizes out the mixture and roll into a ball then roll into the coconut
  5. put it back into the fridge to set and enjoy!
