LYB Broccoli Tuna Bake

Ingredients

  • 5 cups broccoli
  • 2 cups caulliflower
  • 80g garden peas
  • 3 tins tuna
  • 1/2 pot sundried tomato pesto
  • 150g greek yogurt (fage/low sugar)
  • 1 onion diced
  • 2 tsp chili flakes
  • 1 tin tomatoes
  • 80g sweetcorn sweetcorn
  • 150g eat lean cheese

Method

  1. Pre heat the oven to 200 degrees
  2. Chop the the broccoli and cauliflower into chunky heads and steam them along with the peas for 5-6 minutes before draining of water and laying in a baking tray
  3. Mix the yogurt, pesto, chilli, chopped onion, sweetcorn, peas and tuna in a bowl thouroghly and spread ontop of to broccoli layer
  4. Grate the chesss and Sprinkle a nice thick layer over the top. bake in the oven for 20-30 minutes until the Cheese is melted and broccoli tender. Cover the dish with tin foil and bake at 250 for a further 5-10 minutes. Then remove, let cool slightly and Enjoy!
