Method
- Preheat oven and place the mushroom caps face up on a baking sheet.
- Drizzle caps with olive or coconut oil and season with salt and pepper.
- In a bowl, combine the tuna, tomato, avocado, celery, chives, garlic powder, olive oil, lemon juice, salt and pepper.
- Cook the mushroom caps for 2-3 minutes. Remove from oven and top each mushroom with equal parts tuna mixture then grate a touch parmesan on top to taste. Put back into the oven for 1-2 minutes or until the cheese is just melted.
