Ingredients

  • 4 medium sized portobello mushroom caps
  • 1 (5oz) can albacore tuna in olive oil
  • 1 medium tomato, diced
  • 1 medium avocado, diced
  • 2 celery stalks, diced
  • 1 tbs minced chives
  • 1/2 tsp garlic powder 1 tsp olive oil
  • 1.5 tsp fresh lemon juice
  • Sea salt & pepper to taste
  • 4 tbs shredded parmesan cheese

Method

  1. Preheat oven and place the mushroom caps face up on a baking sheet.
  2. Drizzle caps with olive or coconut oil and season with salt and pepper.
  3. In a bowl, combine the tuna, tomato, avocado, celery, chives, garlic powder, olive oil, lemon juice, salt and pepper.
  4. Cook the mushroom caps for 2-3 minutes. Remove from oven and top each mushroom with equal parts tuna mixture then grate a touch parmesan on top to taste. Put back into the oven for 1-2 minutes or until the cheese is just melted.
