Method
- Chop all of the veggies into bitesize pieces.
- In a pan heat the coconut oil before adding in the Red Onion, Broccoli and Baby Corn.
- Stir Gently until the onion softens before adding the Mixed Herbs, Cherry Tomatoes and Garden Peas.
- Heat whilst stirring the vegetables to get a nice mix throughout the pan for 2-3minutes.
- Make two holes in the mixture to crack in the Two Eggs, before sprinkling the Spinach over and cover the pan with a lid.
- The steam produced with cook your eggs until nice and soft.
- Leave covered for 3-4 minutes before uncovering and enjoying!
I like to enjoy this meal straight out of the pan meaning less washing up (YAY!)
Why not try adding some feta or mozzarella cheese, or even serving with a protein bagel for dipping! Just be sure to check your macros!
