Avocado Scramble with Pine Nuts

Ingredients

  • 1/2 avocado
  • 2 eggs 1 white
  • Thumb size feta cheese
  • Tsp pine nuts

Method

  1. Toast pine nuts in the oven for 5 minutes or in a separate pan.
  2. Scramble eggs in a pan for 2 minutes and add chopped avocado to your scramble for another 2 minutes.
  3. Serve on your favourite dish and sprinkle over your toasted pine nuts… add spinach for a bit of green goodness… enjoy!
