Ingredients

  • 3 eggs
  • Palmful lean ham or meat of choice
  • Thumb size feta cheese
  • Thumb size onions
  • 1-2 handfuls veggies of choice
  • Coconut oil

Method

  1. Break the eggs and mix in a bowl with veggies and meats
  2. Heat a pan to medium and add in a little coconut oil
  3. Pour mixture into pan
  4. Fry for 3 minutes and then cover with tin foil and cook for a further 3 minutes until the eggs are set. You can grill in the oven instead for a bronzed top. Losen off the sides with a spatula and serve on up!
