Make sure to dry the broccoli with paper towel as best you can, without mashing it.

Use your hands to combine all ingredients in a bowl.

Heat a nonstick pan on medium heat and use an ice cream scoop (or whatever spoon you have) to place mixture on to the pan. Slightly flatten each fritter with a spatula.

Cook on low heat for 5 mins on each side (like pancakes). You can also bake them on a parchment paper lined baking sheet at 200 degrees for 15-20 mins or until golden brown. This makes around 9 fritters so save some for the rest of the week!
