Broccoli & Feta Fritters

Ingredients

  • 3 cups broccoli steamed & finely chopped
  • 1/3 cup Feta cheese, finely crumbled
  • 3 scallions, finely chopped
  • 2 tbs fresh dill, finely chopped
  • 2/3 cup almond flour (or oats grounded to make flour)
  • 2 eggs, beaten
  • 1 tbs olive oil Pinch Salt and Pepper

Method

  1. Make sure to dry the broccoli with paper towel as best you can, without mashing it.
  2. Use your hands to combine all ingredients in a bowl.
  3. Heat a nonstick pan on medium heat and use an ice cream scoop (or whatever spoon you have) to place mixture on to the pan. Slightly flatten each fritter with a spatula.
  4. Cook on low heat for 5 mins on each side (like pancakes). You can also bake them on a parchment paper lined baking sheet at 200 degrees for 15-20 mins or until golden brown. This makes around 9 fritters so save some for the rest of the week!
