LYB Broccoli And Hemp Soup

Ingredients

  • 1 clove garlic diced
  • 1 large onion diced
  • 1 tsp ground cumin
  • 1 cup low sodium chicken stock
  • 1/4 cup hemp seed
  • 1 broccoli bunch
  • 1 strip lean bacon
  • 1 tbsp coconut oil

Method

  1. Heat a pan with coconut oil on medium heat. Add in the onion and garlic for 3 minutes until golden
  2. Mean while tear the broccoli into florets and boil or steam for 3-5mins then add it to the pan with the onions. Also add in the stock, cumin and hemp seeds and cook for another minute
  3. Pour the stirfry into a blender. In the empty pan cook 1 strip of bacon until crispy. Blend the mixture until smooth and then serve with the bacon choped ontop with a sprinkle of extra hemp. You may repheat this recipe for later use and store in the fridge
