LYB Spicy Sexy Hot Chick Pot

Portions: 6 Cooking Time: 8 hours (slow cooked)

Ingredients

  • 6 chicken breasts
  • 1 onion diced
  • 2 garlic cloves diced
  • 1 tsp turmeric
  • 2 tsp chilli flakes or fresh chilli chopped
  • 2 tsp coriandor spice/fresh
  • 2 tsp parsley spice/fresh
  • 3 tbsp applecider vinegar
  • 4 tsp wholegrain mustard + 1 dijoin mustard
  • 1 lemons juice
  • 4 tsps black pepper
  • 1 cup water

Method

  1. This recipe is best done on an evening in preparation for the next days meals. Or a morning in preparation for dinner
  2. Pre heat the oven to 200 degrees for a crock pot or alternativly heat your crock pot. Place chicken breasts along with all other ingredients including water into the pot and mix to make sure all spices and mustard cover the chicken. If using oven then place in the oven for 60 minutes stiring every 20 minutes
  3. Turn the oven off and leave the pot in the oven still slowly cooking as the oven cools down. Leave the pot there over night or through the day for atleast 7 hours. If using a crock pot then cook all ingredients on a higher heat for 20 minutes and then leave for 8-10 hours slow cooking
  4. When cooked well the chicken should fall apart. Use a folk or knife to pull it apart in the pot. Place in the oven for another 20 minutes on 200 degrees or heat hot pot up and then serve with veg or mix with spinach. For a higher carb option serve with rice, in a wholemeal wrap or sweet jacket potato!
