Carrot Cake Protein Loaf

Ingredients

  • 2 large bananas
  • 2 eggs
  • 3 carrots
  • 5 dates
  • 1 1/2 cups oats ground to make flour
  • 1 cup milk (you may need more)
  • 2 tbsp coconut oil
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1tbsp maple syrup
  • 50g walnuts
  • 60g vanilla protein powder

Method

  1. Pre heat over to 180c and line a loaf tin
  2. Add bananas, eggs, milk, dates, protein powder and coconut oil to a blender and blend till smooth
  3. Pour in a bowl and mix in the ground oat flour, ginger and cinnamon till smooth
  4. Grate the carrots and pulse in the blender a few times to leave you with some carrot texure still. Stir into the mixture.
  5. Add in maple syrup and walnuts and stir in, you may need to add a little more milk here if the mixture is not wet enough.
  6. Place in the oven for 25- 30 minutes until risen, golden and looking yummy!
  7. We added portien yogurt icing to top ours once it had cooled but this is not necessary. (The recipe for the icing is yogurt, coconut oil, maple syrup, ground almond and protein powder)
