Pre heat oven to 200 degrees then grease and line pizza or tray with baking parchment.

Grate the cauliflower heads with a cheese grater into a large bowl.

Heat the grate cauliflower (that looks like rice) in the microwave for 8 minutes.

Place in a tea towel and wring some of the moisture out.

Place back in large bowl and mix in eggs, seasoning and mozzarella till combined well.

Place mixture onto greased tray and shape into your pizza base. Bake in the oven for 15-20 mins till slightly crisp.

Top your base with 4-5 tbsp of tomato sauce, small pieces of mozzarella, parmesan, courgette & any extra toppings.

Bake for a further 10-15 mins and then leave to cool for 5 mins before slicing.
