LYB Lamb Hotpot

Ingredients

  • 2 pounds Leg of Lamb cut into chunks
  • 300g sweet potato peeled and chunked
  • 3 leeks cleaned and chunked
  • 3 carrots peeled and chunked
  • 3 celery stalks chopped
  • garden peas
  • 3 tsp thyme
  • sprinkle salt and pepper
  • 100ml bone broth or chicken stock
  • 1/2 cup fresh parsley

Method

  1. Place all ingredients apart form the parsley into a hot pot or slow cooker and mix
  2. Slowly cook on a low heat for around 8 hours until the lamb is fork tender
  3. Stir in the parsley before serving. You can keep this stew for a week and keep using or freeze to use as easy meals. You can also add rice to this meal to up the carbohydrate intake. This is one of my favourite, simple and easy recipes that is always a weeknight evening winner!
