Chicken nuggets

Ingredients

  • 4 chicken breasts cut into strips
  • 2 cups oats
  • 1 egg
  • 1 lemon
  • 1 pinch salt and pepper

Method

  1. Pre heat the oven to 180 degrees
  2. Crack the egg into one bowl and the oats into another. Mix the egg with lemon juice and salt & pepper and whisk
  3. Dip each chicken strip into the egg and then roll it on the oats, coating evenly before placing on a baking tray
  4. Drizzle over some Olive oil. Bake the chicken for 15 mins then turn over and bake a further 15mins. You may need to grill them for 5-10 mins to crisp up.
  5. I cut mine up into salads or dip into ketchup, yum!
