Method
- Pre heat the oven to 180 degrees
- Crack the egg into one bowl and the oats into another. Mix the egg with lemon juice and salt & pepper and whisk
- Dip each chicken strip into the egg and then roll it on the oats, coating evenly before placing on a baking tray
- Drizzle over some Olive oil. Bake the chicken for 15 mins then turn over and bake a further 15mins. You may need to grill them for 5-10 mins to crisp up.
- I cut mine up into salads or dip into ketchup, yum!
