LYB Cod & Tomato Stew Topped With Bacon

Method
- Heat a large frying pan on medium heat with preferred oil. Add in the onions and cook for 2minutes until bronzed
- Add in the tinned tomatoes, herbs and spices and stir for 30 secs before adding in the fillets of cod. Place them separately in the pan and let simmer for 2-3 minutes
- Cover the pan with tin foil and turn the heat down slightly. Cook like this for 5-8 mins. Mean while fry the bacon by firstly cutting up into strips or chunks and frying in a separate pan
- Whilst the bacon is frying steam or boil your veggies. I like to grate courgette and cook it with broccoli. I steam the broccoli for 6-10 minutes and then a further 2 minutes with the grated courgette. Or for ease I use stir fry veg sometimes which is super delicious with this dish.
