LYB Chicken and Sweetcorn lean soup

Portions: 4 Cooking Time: You need to make the Basic Bone Broth first which is about 4-6 hours (See recipe in low carb section) this recipe = 10 mins

Ingredients

  • 4 cups bone broth
  • 2 tsp Salt and Freshly Ground Black Pepper
  • 2 tsp grated ginger
  • 1 tsp diced garlic
  • 1 large egg white
  • 2 spring onion chopped
  • 1 tin sweetcorn
  • 50-70g chicken torn (use chicken from broth recipe)

Method

  1. Heat a pan on a medium heat. Add in bone broth, sweet corn, ginger, garlic and season. I like to add in a little water too.
  2. Once warm add in the chicken and stir in the egg white for a further few minutes
  3. Sprinkle in the spring onion and serve! I sometimes add spinach and other spices such as turmeric to this dish also
