Method
- Place avocado in a blender with the soaked cashew nuts and blend till smooth.
- Add the yogurt, natural sweetener and pinch of salt then continue to blend until smooth.
- Spoon in cocoa powder and protein then blend again till the mixture is all a lovely chocolatey colour.
- Spoon mixture into a bowl or three smaller pots and allow to set in the fridge for 1-2 hours.
- I like to sprinkle some 70% grated chocolate on top or some cocoa nibs (found in whole food stores).
