LYB Chilli Con Carne

Ingredients

  • 500g lean mince meat or fillet of beef chopped into chunks
  • 2 carrotts chopped
  • 2 cellery sticks chopped
  • 2 galic cloveds minced
  • 2 onions sliced
  • 2 red peppers chopped
  • 1 tin red kidney beans
  • 1 tsp chilli pwder
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 2 tins chopped tomates
  • 1 juice of a lime
  • 1 bunch fresh corriander
  • 2 tbsp greek yogurt
  • 1 tbsp balsamic
  • Cooked brown rice or basmatti
  • 2 tsp coconut or nut oil

Method

  1. Heat a casserole style pan with oil
  2. Chuck in the chopped veg, garlic and spices. Stir and Heat for about 5 minutes till golden
  3. Mix in tinned tomatoes, mince meat, balsamic, lime and beans. Season with a pinch or salt and pepper then add 1 cup of water and bring to the boil. Turn the heat down and let it simmer for 50 minutes stirring every so often so the sides don’t catch
  4. Sprinkle the coriander on top and serve with the rice or I like mine with a jacket potato for lunch the next day too! Dollop some greek yogurt on top with a little homemade guacamole or avocado and it it simply delicious!
