Method
- Heat a casserole style pan with oil
- Chuck in the chopped veg, garlic and spices. Stir and Heat for about 5 minutes till golden
- Mix in tinned tomatoes, mince meat, balsamic, lime and beans. Season with a pinch or salt and pepper then add 1 cup of water and bring to the boil. Turn the heat down and let it simmer for 50 minutes stirring every so often so the sides don’t catch
- Sprinkle the coriander on top and serve with the rice or I like mine with a jacket potato for lunch the next day too! Dollop some greek yogurt on top with a little homemade guacamole or avocado and it it simply delicious!
