Easy Thai Green Chicken Curry

Ingredients

  • 4 chicken breasts chopped into small chuncks
  • 1 handful tenderstem broccoli
  • 2 handfuls green beans
  • 2 handfuls maunge tout
  • 1 onion diced
  • 1 jar (150g) green thai curry paste
  • 1 tin (400ml) light coconut milk
  • Rice of choice to serve (not inculded in the macros above)

 

 

Method

  1. Chop the long stems off your broccoli and place in a hot pot with the other greens. Add a little water and boil for 5 minutes unitl softening.
  2. Drain the water out the pot.  Add the diced onions along with a drizzle of oil and all the thai curry paste. Give it a god stir and then heat on the stove for 1 or 2 minutes
  3. Add the chopped chicken and coconut milk and let bubble on a medium to low heat for 45-50 minutes until chicken is cooked and tender.
  4. Season with a little salt and pepper serve with rice. I like this dish with uncle bens brown rice and quinoa. Its great to keep in the fridge and grab portions out to heat up when wanted. it will keep for a week.
