Method
- Chop the long stems off your broccoli and place in a hot pot with the other greens. Add a little water and boil for 5 minutes unitl softening.
- Drain the water out the pot. Add the diced onions along with a drizzle of oil and all the thai curry paste. Give it a god stir and then heat on the stove for 1 or 2 minutes
- Add the chopped chicken and coconut milk and let bubble on a medium to low heat for 45-50 minutes until chicken is cooked and tender.
- Season with a little salt and pepper serve with rice. I like this dish with uncle bens brown rice and quinoa. Its great to keep in the fridge and grab portions out to heat up when wanted. it will keep for a week.
