Method

In a large non stick pan, melt coconut oil on a medium heat.

Chuck in chicken and cook for 3-5 minutes.

Chuck in the peas, peppers, chilli and onions and cook for 2 minutes on a higher heat.

Mix in the curry paste and cook for a further minute.

Add in the coconut milk and stir fry for a further minute.

Dish up and munch up! Save left over portions for other meals in the week.
