LYB Thai Red Curry

Ingredients

  • 1 tsp coconut oil 400g chicken breast chopped
  • 1 tin coconut milk
  • 1/2 cup red curry paste
  • 1 cup onion chopped
  • 1 cup sugar snap peas
  • 1 cup peppers chopped
  • 1 red chilli finely chopped
  • (You can add any other veg you like… I like to add a bit of broccoli)

Method

  1. In a large non stick pan, melt coconut oil on a medium heat.
  2. Chuck in chicken and cook for 3-5 minutes.
  3. Chuck in the peas, peppers, chilli and onions and cook for 2 minutes on a higher heat.
  4. Mix in the curry paste and cook for a further minute.
  5. Add in the coconut milk and stir fry for a further minute.
  6. Dish up and munch up! Save left over portions for other meals in the week.
