Creamy Coleslaw

Ingredients

  • 1/2 cup raw cashews
  • 1/4 cup water
  • 1/4 cup diced red onion
  • 3 tablespoons raw apple cider vinegar
  • 1 to 2 tbsp honey
  • 1/2 teaspoon sea salt
  • 1/4 cup shredded cabbage
  • 1/4 cup shredded carrotts
  • 1/4 cup shredded raw beets

Method

  1. In a blender place the cashews, water, onion, raw apple cider vinegar, salt, honey and blend it all up!
  2. Place your shredded vegetables in a bowl and pour over your blended mixture. Give the slaw a toss and leave to marinade for at least an hour before serving.
