Crunchy Chicken or Turkey Strips

Ingredients

  • 1 chicken or turkey breast, cut into strips (your choice is size)
  • 1 egg, whisked
  • 1 cup unsweetened shredded coconut
  • 1⁄2 cup almond flour
  • 1 pinch of salt
  • 1 tsp coconut oil, for greasing pan

Method

  1. Preheat oven to 200 degrees.
  2. In a bowl, mix your coconut, flour and salt.
  3. Heat a large non stick pan on a high heat.
  4. Take a strip of chicken at a time, dunk it in the whisked egg then straight in the flour mixture and then into the hot pan for 1 minute each side… try not to over crowd the pan.
  5. Place strips on a cooling rack that is on top of a lined baking tray and bake in the oven for 10-15 mins till cooked and crisp .. there should be no pink left inside.
  6. Let your chicken strips cool and then get dipping and munching… I like them with maple mustard sauce (see sauce section).
