Crunchy Chicken or Turkey Strips

Method
- Preheat oven to 200 degrees.
- In a bowl, mix your coconut, flour and salt.
- Heat a large non stick pan on a high heat.
- Take a strip of chicken at a time, dunk it in the whisked egg then straight in the flour mixture and then into the hot pan for 1 minute each side… try not to over crowd the pan.
- Place strips on a cooling rack that is on top of a lined baking tray and bake in the oven for 10-15 mins till cooked and crisp .. there should be no pink left inside.
- Let your chicken strips cool and then get dipping and munching… I like them with maple mustard sauce (see sauce section).
