LYB pesto fish parcel

Ingredients

  • 1 fillet cod
  • 5 bacon medallions
  • 1 courgett
  • 1/2 jar chargrilled peppers
  • 4 tsp reduced fat pesto

Method

  1. Pre heat oven to 200 degrees
  2. Lay 3 pieces bacon on the tin foil over lapping. Spread 1/2 tsp pesto over and then place the fish on top
  3. Wash the oil from the peppers and place the over the fish then fold the sides of the bacon up around to fish. spread another 1/2 tsp pesto over the peppers and fish
  4. Grate strips of courgette and over the fish and peppers with them lengthways and then width ways. Spread a little more pesto over
  5. Place two more bacon medallions on top and push in the sides around the parcel. I like to add a little more courgette on top and then spread over some more pesto
  6. Fold up the sides of the tin foil and place on a baking tray. Bake in the oven for aroun 30 minutes until the cougette looks crisp and bacon is cooked. I serve mine on a bed of asparigus or green beans. Enjoy!
