LYB pesto fish parcel

Method
- Pre heat oven to 200 degrees
- Lay 3 pieces bacon on the tin foil over lapping. Spread 1/2 tsp pesto over and then place the fish on top
- Wash the oil from the peppers and place the over the fish then fold the sides of the bacon up around to fish. spread another 1/2 tsp pesto over the peppers and fish
- Grate strips of courgette and over the fish and peppers with them lengthways and then width ways. Spread a little more pesto over
- Place two more bacon medallions on top and push in the sides around the parcel. I like to add a little more courgette on top and then spread over some more pesto
- Fold up the sides of the tin foil and place on a baking tray. Bake in the oven for aroun 30 minutes until the cougette looks crisp and bacon is cooked. I serve mine on a bed of asparigus or green beans. Enjoy!
