Method
- Heat a casserole dish on medium – high heat and add in the coconut oil. Season the beef with the s & lightly fry in the dish for 1 minute each side then remove the beef and set aside.
- Place the butter, onions, broccoli, carrots, mushrooms and kales in the dish and cook for a minute before mixing in corn flour and adding the beef back in. Pour over the tomatoes, apple cider vingear and beef stock then mix in the fresh thyme petals
- Pre heat the oven to 170 degrees. Place the sweetpotato slices on top of the mixture and put the lid on.
- Cook in the oven for 60 minutes and then turn up the heat to 200 degrees and remove the dishes lid. Cook like this for another 30 minutes (I sometimes use the grill setting on the oven to crisp up the potatos)
- If I am having a dinner party then at this poin I dish the meat into serving dishes, place the potato on top, brush with coconut oil and a sprinkle of salt and then cook in the separte dishes for the 30minutes to make it easy to serve!
- If its just for me then I serve it on its own in a bowl and enjoy. This dish lasts a week and is a great lunch box meal! I sometimes have it for breakfast post training too!
