LYB Fit Falafel

Ingredients

  • 1 tin chickpeas drained
  • 100g spinach
  • 1 cup fresh parsley
  • 3 cloves garlic
  • 1 lemons juice
  • 40g walnuts
  • 30g scoop unflavoured protein(hemp, pea, whey)
  • 1 pinch S&P
  • 1 tsp coconut oil

Method

  1. Place all ingredients into a blender and blend till almost smooth
  2. Preheat the oven to 200 degrees, line a baking tray then heat a frying pan on medium heat with 1 tsp coconut oil
  3. Take the mixture out of the blender in 6 portions and with your hands shape to make patties
  4. Place each pattie in the frying pan for 2-3mins each side and then place on a lined baking tray. Bake in the oven for 20-25 mins and turn over half way (the longer you leave them the firmer they get)
  5. Return the falafel to the pan for 30 secs each side to crisp and then let cool on a rack or plate. These are great with the LYB tahini dressing, LYB coleslaw and sweet potato chips! I keep them for through the week to have with salads at lunch or as a quick mid afternoon pick me up.
