Method
- Place all ingredients into a blender and blend till almost smooth
- Preheat the oven to 200 degrees, line a baking tray then heat a frying pan on medium heat with 1 tsp coconut oil
- Take the mixture out of the blender in 6 portions and with your hands shape to make patties
- Place each pattie in the frying pan for 2-3mins each side and then place on a lined baking tray. Bake in the oven for 20-25 mins and turn over half way (the longer you leave them the firmer they get)
- Return the falafel to the pan for 30 secs each side to crisp and then let cool on a rack or plate. These are great with the LYB tahini dressing, LYB coleslaw and sweet potato chips! I keep them for through the week to have with salads at lunch or as a quick mid afternoon pick me up.
