LYB Halloumi Curry

Ingredients

  • 2 packs (225g) light halloumi
  • 1 onion
  • 1 tin tomatoes
  • 2 tsp medium curry powder
  • 2 tsp apple cidar vinegar
  • 1 bag Jamie Oliver curried chickpeas and lentils

Method

  1. Chop halloumi into chunks and fry till golden each side, you may need a little oil but I usually dry fry it and just dont let it sit long enough to burn or get stuck
  2. Dice a Onion and add you the pan, at this point you may need to add a little oil. Cook for another 3 minutes, tossing often until the onions are becoming soft and cooked
  3. Microwave the Jamie Oliver chickpea bag for 30 sec and then add to the pan along with the tinned tomatoes, curry powder and vinegar. Stir and simmer for 2- 3 minutes.
  4. I like to add spinach to mine but you don’t have to. Enjoy!
