LYB Sweet potato Cottage Pie

Method
- Preheat oven to 200 degrees
- Heat a pan on medium heat and add in coconut oil, onions and carrots. Fry for a minute and then add in the mince and fry until slightly golden
- Add in the cellery, galic, parsley, tinned tomatoes, mustard, peas and simar for another 2 minutes
- Mean while take the skin from the baken sweetpotatoes. The inside should be soft. Put them in a bowl and mash up until smooth(you may need to add a little milk to help it)
- Spoon the Mince into a large baking dish. Top with the potato mash evenly spread. Use a fork to draw crisscross lines ontop on the mash layer so the top crisps a little in the oven
- Sprinkle over some grate eatlean cheese and bake in the oven for 25-30minutes
