LYB Sweet potato Cottage Pie

Ingredients

  • 500g lean mince (turkey or beef)
  • 1 tbsp coconut oil
  • 2 tsp wholegrain mustard
  • 3 tbsp chopped parley
  • 1 tbsp chopped onion
  • 1 tbsp chopped garlic
  • 650g sweetpotato(4 large potatos) baked in the oven for 60mins with skins on
  • 1 chopped carott
  • 1 chopped cellery stick
  • 1 cup garden peas steamed for 3 mins
  • 2 tins tomatoes
  • 200g eat lean cheese

Method

  1. Preheat oven to 200 degrees
  2. Heat a pan on medium heat and add in coconut oil, onions and carrots. Fry for a minute and then add in the mince and fry until slightly golden
  3. Add in the cellery, galic, parsley, tinned tomatoes, mustard, peas and simar for another 2 minutes
  4. Mean while take the skin from the baken sweetpotatoes. The inside should be soft. Put them in a bowl and mash up until smooth(you may need to add a little milk to help it)
  5. Spoon the Mince into a large baking dish. Top with the potato mash evenly spread. Use a fork to draw crisscross lines ontop on the mash layer so the top crisps a little in the oven
  6. Sprinkle over some grate eatlean cheese and bake in the oven for 25-30minutes
