LYB Sexy Sweetcorn and Spinach Fritters with spicy chicken

Method
- In a lined tray place chicken and sprinkle with spices. Place in oven at 200 degrees for 30-40 minutes
- Place sweetcorn, basil, spinach, eggs, basil and corn flour in a blender and wizz till smooth
- Heat a pan on high heat with 1 tsp coconut oil or other high heat resistant oil and pour in 3-4 tbsp of the mixture at a time to make circles like green pancakes
- After 2-3 minutes flip the fritters and cook for a further minute on the other side before removing onto a plate
- Place the cashews onto a baking tray and place in the oven for 5 minutes until golden
