LYB Sexy Sweetcorn and Spinach Fritters with spicy chicken

Portions: 2 (6 fritters Cooking Time: 45 mins

Ingredients

  • 2 chicken breasts
  • 1 tin sweetcorn
  • 2 eggs
  • 1 pinch salt
  • 1 tsp basil
  • 2 tbsp corn flour
  • 1 cup spinach
  • 4 tbsp cashew nuts
  • 2 tsp spices of choice (pick with no added sugars)

Method

  1. In a lined tray place chicken and sprinkle with spices. Place in oven at 200 degrees for 30-40 minutes
  2. Place sweetcorn, basil, spinach, eggs, basil and corn flour in a blender and wizz till smooth
  3. Heat a pan on high heat with 1 tsp coconut oil or other high heat resistant oil and pour in 3-4 tbsp of the mixture at a time to make circles like green pancakes
  4. After 2-3 minutes flip the fritters and cook for a further minute on the other side before removing onto a plate
  5. Place the cashews onto a baking tray and place in the oven for 5 minutes until golden
  6. Once the chicken is cooked through remove and serve with fritters and roasted cashews. Enjoy! Oh and also check out my protein version of the fritters, perfect for a quick grab through the week
