Method
- In a pan of boiling water cook the potato for 5-6minutes until soft
- Drain and empty into a bowl. Add in melted coconut oil, garlic, rosemary and lamb then toss until evenly coated
- Thread onion, sweet potato then lamb onto the skewers so each skewer has an even mix
- Heat a grill or bbq rack and grill the skewers for 6-8 minutes each side
- Serve with lettuce and a tbsp yogurt dressing. Enjoy!
