LYB Lamb & Sweet Potato Skewers

Ingredients

  • 2 tsp coconutoil oil
  • 1 onion chopped
  • 600g lean lamb cubed
  • 2 cloves garlic
  • 2 tbsp fresh rosmery
  • 1 whole sweetpotato cubed
  • 2 cups baby lettuce
  • 4 tbsp greek yogurt mixed with 1 tsp fresh mint, garlic, paprika and 2 tbsp apple cider vinegar

Method

  1. In a pan of boiling water cook the potato for 5-6minutes until soft
  2. Drain and empty into a bowl. Add in melted coconut oil, garlic, rosemary and lamb then toss until evenly coated
  3. Thread onion, sweet potato then lamb onto the skewers so each skewer has an even mix
  4. Heat a grill or bbq rack and grill the skewers for 6-8 minutes each side
  5. Serve with lettuce and a tbsp yogurt dressing. Enjoy!
