LYB Curried Chicken Wraps (low carb or higher carb)

Portions: 4-5 Cooking Time: 15 mins - 20 mins

Ingredients

  • 1.5 tbsp coconutoil oil
  • 1 onion chopped
  • 400g chicken diced
  • 2 tbsp greek yogurt
  • 2 tsp curry powder
  • large lettuce leafs as lowcarb wrap option
  • or a tortilla wrap for high carb option
  • 3 cherry tomatoes chopped

Method

  1. In a bowl mix diced chicken pieced with the greek yogurt and curry powder and leave to marinade for 5-10 minutes
  2. Heat a frying pan on medium and add the coconut oil
  3. Add the chicken to the pan and cook with the onions for 8-12 minutes until golden. Toss regularly.
  4. Heat a frying pan on medium and add the coconut oil
  5. Serve with lettuce in a toasted wrap as a high carb option or in a large lettuve leaf as a low carb option. I top mine with extra lettuce, oinions and tomatoes with a tsp of my herby yogurt dip recipe
