LYB Lean Green Protein Sweetcorn Fritters

Ingredients

  • 1 tin sweetcorn
  • 2 eggs
  • 1 pinch salt
  • 1 tsp basil
  • 3 tbsp plain protein powder(I use bio synergy paleo)
  • 1 cup spinach
  • 1 glove garlic diced

Method

  1. Place sweetcorn, basil, spinach, eggs, basil, garlic and protein powder in a blender and wizz till smooth
  2. Heat a pan on high heat with 1 tsp coconut oil or other high heat resistant oil and pour in 3-4 tbsp of the mixture at a time to make circles like green pancakes
  3. After 2-3 minutes flip the fritters and cook for a further minute on the other side before remove and cool on a plate. I love having 2 or 3 as a mid-morning or afternoon meal because they are high in protein and balanced in carbs
