Method
- Place sweetcorn, basil, spinach, eggs, basil, garlic and protein powder in a blender and wizz till smooth
- Heat a pan on high heat with 1 tsp coconut oil or other high heat resistant oil and pour in 3-4 tbsp of the mixture at a time to make circles like green pancakes
- After 2-3 minutes flip the fritters and cook for a further minute on the other side before remove and cool on a plate. I love having 2 or 3 as a mid-morning or afternoon meal because they are high in protein and balanced in carbs
