LYB low carb pancakes

Portions: 1 (4 pancakes) Cooking Time: 15 mins

Ingredients

  • 2 eggs
  • 2 tbsp low fat cream cheese
  • 1tsp natural sweetener
  • 1tsp cinnamon
  • 1 handful berries & nuts to serve (not included in the macros)
  • 1 tsp butter or coconut oil to cook

Method

  1. Whisk the eggs with the cheese, sweetner and spice until smooth then let sit for a few minute to allow the bubbles to disapear
  2. Heat a large frying pan with coconut oil or butter
  3. Pour 1/4 of the micture into the pan and fry for 2-4 minutes each side until golden
  4. Place on a plate and repeat until you have all 4 pancakes. Serve with topping of choice. Nuts are a great option to keep it low carb. I like mine with a protein shake on the side and a dollop of almond butter on top and a drizzle of natural zero syrup or maple syrup over.
