Homemade Granola

Ingredients

  • 3 cups oats
  • 1 cup mixed nuts of choice (I love pistachios, almonds and cashews)
  • 1/4 cup mixed seeds
  • 3 tbsp coconut shavings
  • 2 tbsp maple syrup

Method

  1. Preheat your oven to 220°.
  2. In a baking dish mix oats, nuts, seeds and coconut.
  3. Place the dish in the oven for 15 minutes and mix the granola every 5 minutes.
  4. Bring out of the oven and pour over the maple syrup and leave to cool (toss after 5 minutes so that the syrup spreads).
  5. If you like dried berries in your granola, now is the time to add them! I always add fresh berries rather than dried because there’s less sugar.
  6. I love 3/4 cup size portion with almond milk or total greek yogurt and fresh berries!
