Method
- Make your sauce by cook all sauce ingredients in a pan and then blending to make a sauce texture. Leave to the side for now.
- Get a large frying pan ready with 2 tsp coconut or nut oil on medium heat.
- Place all ingredients into a mixing bowl and mash together with a spoon until evenly combined.
- Take out tbsp size heaped chunks and mould into balls with your hands.
- Place each ball into the pan and heat until the mixture binds and goes golden, then roll onto the side to cook.
- Once every side of the balls are golden add the mushrooms to the pan for a further few minutes till the mushrooms are golden.
- Mix your courgette strings and sundries tomatoes (or pasta on a carbs meal) with the tomato pasta sauce recipe and heat in the same pan for a further 1 minute. Serve up and enjoy!
