LYB Meatballs & Courgetti Pasta

Ingredients

  • 400g lean turkey or beef mine meat
  • 2 small or 1 large eggs
  • 1 clove garlic minced
  • 1/2 onion diced small
  • 1 tsp chilli flakes
  • 1 cup mushrooms sliced
  • 1/2 cup sundried tomatos
  • 2-4 courgettes grated or sprilized
  • (You could use brown pasta as a carbs meal)
  • Tomato Pasta Sauce: (keep extra sauce in the fridge to use with other meats through the week. e.g fish, tomato sauce and green veg)
    • 1.5 tbsp olive oil
    • 1 onion chopped
    • 1 cup chopped carrots
    • 1 cup chopped celery
    • 1 cup chopped mushrooms
    • Pinch S&P
    • 4 tsp garlic minced
    • 3 cans tinned plum tomatoes

Method

  1. Make your sauce by cook all sauce ingredients in a pan and then blending to make a sauce texture. Leave to the side for now.
  2. Get a large frying pan ready with 2 tsp coconut or nut oil on medium heat.
  3. Place all ingredients into a mixing bowl and mash together with a spoon until evenly combined.
  4. Take out tbsp size heaped chunks and mould into balls with your hands.
  5. Place each ball into the pan and heat until the mixture binds and goes golden, then roll onto the side to cook.
  6. Once every side of the balls are golden add the mushrooms to the pan for a further few minutes till the mushrooms are golden.
  7. Mix your courgette strings and sundries tomatoes (or pasta on a carbs meal) with the tomato pasta sauce recipe and heat in the same pan for a further 1 minute. Serve up and enjoy!
