Ingredients

Ingredients- Meat

  • 2 green apples
  • 1 small cup raisins
  • 2 tsp cinamon
  • 1 tsp nutmeg (grated)
  • 1 tsp 5 spices
  • 1/2 cup almonds
  • 2 tbsp goji berry flax seed
  • 2 tbsp lemon juice
  • 2 tbsp fresh orange juice
  • 1 tsp vanilla extract
  • 1 cup water

Pastry

  • 1 large cup oats blended to make flour
  • 2 tbsp spelt flour or gluten free flour
  • 100g organic butter
  • 4tbsp organic honey or maple syrup
  • 100ml almond milk

Method

  1. Preheat oven to 180 degrees
  2. Finely chop the apples and put in a pan over medium heat with 1 cup water. Add in all the spices, raisins and simmer. Chop the almonds and add in. Simmer for 30-45 minutes until mushy and then stir in the flax seed and mush together with a spoon
  3. Mean while make the dough. Place ground oats and a few tbsp spelt flour into a mixing bowl (keep a little flour spare for rolling) and chop the chilled butter in. Using your finger tips rub the butter into the flour to make a bread crumb mixture. Make sure the butter is even throughout the mixture and there are no big chunks
  4. Spoon in the maple syrup or honey. Then slowly pour in a little almond milk at a time and mix to make a dough. Dont pour in too much milk or the dough will be to soggy to roll out. Need the dough until you have a good ball to roll out
  5. Sprinkle flour onto your worktop and rollout the dough thinly. Using a cooking cutter cut circles from the dough and place in a cup cake tray, pushing the dough into each pocket to form cases. ROll the remaining dough into a ball and roll out evenly again. Use a star cutter to cut out the top to the pies.
  6. Let the mince meat cool and the spoon evenly into each dough pocket. Then place the stars on top and brush with a little water. Place in the oven for 15-20 minuter until golden and crisp.
  7. Remove and leave to cool for 10 minutes before serving. Serve warm and enjoy! Oh and if you have extra pastry make stars and bake to make biscuits! Merry Fitness Christmas
