LYB Helen’s Banana Bread

Ingredients

  • 200g oats (blend to make flour)
  • 2 eggs
  • 2 medium bananas
  • 50g chopped dates
  • 1 tbsp baking powder
  • 60g caramel whey (or flavour of choice)
  • 3g desiccated coconut for the top
  • 150-200ml almond milk

 

Method

  1. Preheat oven to 170 degrees. Grease and line a loaf tin
  2. Add all ingredients together in a blender or hand mix in a large bowl. Pour into the loaf tin
  3. Sprinkle the coconut on top and place in the oven
  4. Cook for 20-30 mins until golden on top. If you like it super squidgy in the middle like we do then take it out at 20 mins. If the coconut starts to darken quickly, cover the top of the loaf with foil whilst cooking.
  5. Allow to cool before slicing into 12 pieces. Helen freezes her slices and takes one out for work. It defrosts by mid morning and is the perfect little pick me up!
