Method
- Boil or steam the broccoli for 5 minutes and then add all of the veg to a high heat pan with coconut oil
- Keep tossing the veg for 5-6 minutes and then add in the prawns and cashew nuts. Cook for another 3-4 minutes. Meanwhile heat the microwave (or precooked)rice for 2 mins then add to the pan. Toss in the soya beans and sauces and mix for another 30 seconds.
- Serve up in bowls and keep spare portions for the next day!This is one of my favourite post evening workout meals
