LYB Prawn and Rice Stir fry

Ingredients

  • 600g cooked and peeled king prawns
  • 2 bags uncle bens or bag rice/quinoa of choice
  • 100g mushrooms
  • 100g baby corn
  • 100g stir fry veg
  • 100g broccoli
  • 30g soya beans
  • 1tsp coconut oil
  • 2 tbsp terriyaki sauce
  • 1 tbsp apple cider vingar
  • 3 tbsp soya sauce
  • 30g cashew nuts

Method

  1. Boil or steam the broccoli for 5 minutes and then add all of the veg to a high heat pan with coconut oil
  2. Keep tossing the veg for 5-6 minutes and then add in the prawns and cashew nuts. Cook for another 3-4 minutes. Meanwhile heat the microwave (or precooked)rice for 2 mins then add to the pan. Toss in the soya beans and sauces and mix for another 30 seconds.
  3. Serve up in bowls and keep spare portions for the next day!This is one of my favourite post evening workout meals
