Peanutty Chicken with Rice

Method
- In a large bowl mix your 4 tbsp of your soy sauce with the olive oil, salt and pepper.
- Place chicken strips into the bowl and mix with soy marinade. Leave in the fridge for at least an hour.
- Make the nutty sauce by placing the rest of your soy, teriyaki sauce, nut butter and maple syrup in a bowl and mixing well till smooth. Add a little water to lighten the mixture.
- Prepare the grill at 180 degrees and place the chicken on for 3-5 minutes each side till golden and cooked all the way through.
- In a pan place lettuce for 1 minute on a medium heat.
- Take the chicken from the heat, place in a bowl and pour over the nutty sauce.
- Serve with warm cooked rice and your wilted lettuce with a sprinkle of roast peanut over… enjoy!
