Peanutty Chicken with Rice

Ingredients

  • Marinade:
    • 40 g Peanut Butter
    • 2 tbsp Soy sauce – 1 tsp Salt, table
    • 1tsp black pepper
    • 5 chicken breasts
  • Sauce:
    • 2 tbsp(s), Soy sauce
    • 2 tbsp, Sauce, teriyaki, ready-to-serve
    • 2 tbsp Peanuts dry roasted and crushed
    • 2tbsp Syrups: Maple
    • 1 cup cooked rice (jasmine, brown, quinoa wholegrain mix)
    • 4 cups lettuce or spinach

Method

  1. In a large bowl mix your 4 tbsp of your soy sauce with the olive oil, salt and pepper.
  2. Place chicken strips into the bowl and mix with soy marinade. Leave in the fridge for at least an hour.
  3. Make the nutty sauce by placing the rest of your soy, teriyaki sauce, nut butter and maple syrup in a bowl and mixing well till smooth. Add a little water to lighten the mixture.
  4. Prepare the grill at 180 degrees and place the chicken on for 3-5 minutes each side till golden and cooked all the way through.
  5. In a pan place lettuce for 1 minute on a medium heat.
  6. Take the chicken from the heat, place in a bowl and pour over the nutty sauce.
  7. Serve with warm cooked rice and your wilted lettuce with a sprinkle of roast peanut over… enjoy!
