Portions: 5-6 burgers Cooking Time: 15 mins

Ingredients

  • 400g lean mince
  • 1/2 cup chopped onion
  • 1 chilli pepper diced
  • 1 large egg
  • 1 tsp coconut oil
  • 2 cups mixed leaf salad
  • 1/2 cup cherry tomatoes
  • 1 tbsp total 0 greek yogurt

Method

  1. In a large bowl, mix your mince with the onion, chilli and egg. Also season with S&P.
  2. Take tbsp size portions from the mixture and shape into burger shapes, or ovals if you want to get creative.
  3. In a pan, melt the oil and then fry each burger for around 4 minutes each side till cooked all the way through.
  4. Add a few burgers onto the bed of salad with some tomatoes and tbsp of yogurt to top, there you have a super healthy burger salad. I sometimes melt cheese on top of mine or add avocado too!
  5. On a carb day, get the sweet potato chips on the go too! And don’t forget save the left over portions for tomorrow!
