LYB Sexy Sausage Hot Pot

Portions: 4 Cooking Time: 4 hours (slow cooked)

Ingredients

  • 12 lean chicken (or lean pork) sausages. This recipe uses muscle food chicken and pork low fat sausages
  • 2 onions diced
  • 2 garlic cloves diced
  • 2 large carotts peeled and chopped
  • 6 rashes bacon with fat cut of
  • 1 tin cherry or plumb tomatoes (choose a low sugar tin, no more than 10g)
  • 2 tsp chilli flakes or fresh chilli chopped
  • 2 tsp coriandor spice/fresh
  • 2 tsp parsley spice/fresh
  • 4 tsps lea & perrins
  • 4 tsp wholegrain mustard + 1 dijoin mustard
  • 1 tbsp organic butter or coconut oil
  • 4 tsps black pepper
  • 1 cup water

Method

  1. This recipe is best done on an evening in preparation for the next days meals. Or a morning in preparation for dinner
  2. Pre heat the oven to 200 degrees. Place a hot pot on the hob on a medium heat and melt half the butter. Add in onions, carotts and cut up lean bacon. Let sizzle for 3 minutes, stiring regularly. Mean while in a none stick pan fry sausages with the other half buter, 1 min each side then place the sausages in the hot pot with the other ingreidents
  3. Add in the spices, mustard, tomatoes and water and mix. Place in the pre heated oven for 30 minutes. Turn the heat down to 160, give it a stir and cook for another 30 minutes. Turn the oven off and leave the hot pot in for another hour or two to slowly cook as the oven cools down
  4. Serve on its own with extra vegtables such as spinach or I make it into a higher carbohydrate meal by serving with sweetpotato mash. Delicious!
