LYB Sweetpotato Brownies

Ingredients

  • 450g baked sweetpotato skinless (bake for 40 mins, cool, then take skin off)
  • 2 large eggs
  • 60g chocolate whey protein
  • 50g walnuts chopped or almonds
  • 2 tbsp 100% cocoa powder
  • 2 pinch salt
  • 1 tbsp Coconut oil
  • 100ml unsweetend almond milk
  • 50g 70-85% dark chocolate

Method

  1. Pre heat the oven to 180 degrees and grease a small baking tray with coconut oil
  2. Place soft sweetpotato,eggs, protein, peanutbutter, salt and cocoa powder in a bowl and mix until smooth and combined. Keep adding dashes of milk to loosen the mixture
  3. Add in the nuts of choice into the mixture and stir in
  4. Spoon the mixture into the baking tray and place in the over for 20-30 minutes
  5. Test the brownie by placeing a knife down the middle. The mixture should be set but still moist.You may need to cook for a extra 5 minutes if the mixture is still very gooey
  6. Leave to cool for 5 minutes then break up the dark chocolate and sprinkle it on top to melt. Place in the fridge to set. Slice up into 16 pieces and enjoy!
