Method
- Pre heat the oven to 180 degrees and grease a small baking tray with coconut oil
- Place soft sweetpotato,eggs, protein, peanutbutter, salt and cocoa powder in a bowl and mix until smooth and combined. Keep adding dashes of milk to loosen the mixture
- Add in the nuts of choice into the mixture and stir in
- Spoon the mixture into the baking tray and place in the over for 20-30 minutes
- Test the brownie by placeing a knife down the middle. The mixture should be set but still moist.You may need to cook for a extra 5 minutes if the mixture is still very gooey
- Leave to cool for 5 minutes then break up the dark chocolate and sprinkle it on top to melt. Place in the fridge to set. Slice up into 16 pieces and enjoy!
