LYB Sweetpotato Protein Pancake

Ingredients

  • 100g baked sweetpotato skinless
  • 100g egg white (4/5egg whites)
  • 20g vanilla or chocolate whey protein
  • 1 tsp cinnamon spice

Method

  1. Place sweetpotato,egg whites, protein and cinnamon in a blender until smooth
  2. Heat a pan with a little coconut or oil of choice at medium heat. Pour the whole mixture in to make a big pancake or do little ones if you prefer. Cook for 2 minutes and then cover with tin foil to cook for the top for a further minute. Flip and cook for 1 minute longer before serving
  3. Serve with berries ontop or peacans also go amazing!
