Method
- Place sweetpotato,egg whites, protein and cinnamon in a blender until smooth
- Heat a pan with a little coconut or oil of choice at medium heat. Pour the whole mixture in to make a big pancake or do little ones if you prefer. Cook for 2 minutes and then cover with tin foil to cook for the top for a further minute. Flip and cook for 1 minute longer before serving
- Serve with berries ontop or peacans also go amazing!
