Method
- Heat a non-stick pan of medium heat with a dash oil.
- Chuck in the fish and veg and cook for 6 minutes, tossing every few minutes.
- Once fish is cooked through add the pesto and mix in.
- Cook for a further minute and then dish it on up!
- I like to mix mine with cauliflower rice (cauliflower made into rice) or on a refuel meal I add normal rice.
