Monkfish Red Pesto Stir Fry

Ingredients

  • 400g Monk fish diced into chunks and sprinkled with pepper
  • 1 cup garden peas
  • 150g mange toute
  • 2 cups chopped yellow or orange bell pepper
  • 4 tbsp red pesto sauce

Method

  1. Heat a non-stick pan of medium heat with a dash oil.
  2. Chuck in the fish and veg and cook for 6 minutes, tossing every few minutes.
  3. Once fish is cooked through add the pesto and mix in.
  4. Cook for a further minute and then dish it on up!
  5. I like to mix mine with cauliflower rice (cauliflower made into rice) or on a refuel meal I add normal rice.
