Method
- Heat a large non-stick pan and melt the oil.
- Chuck in the chicken to cook for a few moments and in the mean time mix the peanut butter, soy sauce, garlic and a little boiling water together in a bowl.
- Chuck in the veg and ginger into pan with the chicken and stir fry for 3-5 minutes on a higher heat.
- Pour over the peanut sauce and mix it in.
- Dish up the stir fry and then sprinkle on top your roasted peanuts and some basil leaves… don’t forget to keep your left over portions for a yummy lunch or dinner tomorrow!
