Peanut Butter Chicken

Ingredients

  • 2 tbsp peanut butter
  • 1 tbsp coconut oil
  • 2 tbsp soy sauce
  • 1tsp minced garlic
  • 1tsp minced ginger
  • 2 peppers sliced
  • 100g mange tout
  • 1/2 onion chopped
  • 400g chicken breast chopped
  • 20g roast peanuts
  • 2 tbsp boiling water
  • Handful basil leaves

Method

  1. Heat a large non-stick pan and melt the oil.
  2. Chuck in the chicken to cook for a few moments and in the mean time mix the peanut butter, soy sauce, garlic and a little boiling water together in a bowl.
  3. Chuck in the veg and ginger into pan with the chicken and stir fry for 3-5 minutes on a higher heat.
  4. Pour over the peanut sauce and mix it in.
  5. Dish up the stir fry and then sprinkle on top your roasted peanuts and some basil leaves… don’t forget to keep your left over portions for a yummy lunch or dinner tomorrow!
