Slow Cooked Mediterranean Lentil Soup

Portions: 6 Cooking Time: 3-4 hours on high or 6-8 on low

Ingredients

  • 1 cup green lentils, rinsed
  • 1/2 cup red onion, chopped small
  • 5 cups vegetable broth
  • 1/2 cup celery, chopped small
  • 1/2 cup carrot, peeled and chopped small
  • 1 small sweet potato, peeled and chopped small
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice
  • 2 tablespoons dried oregano
  • 2 tablespoons tomato paste
  • 3 cups fresh baby spinach

Method

  1. In a slow cooker, combine all ingredients except for the tomato paste and spinach. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
  2. After the cook time is complete the lentils should be tender. Stir in the tomato paste and spinach. Cover and cook for 20 more minutes more on high or just until the spinach is wilted.
  3. Spoon into serving bowls and enjoy!
