Slow cooker Pulled Thai Chicken

Ingredients

  • 1 pound chicken thighs
  • 2 Tablespoons olive oil
  • 1/2 cup coconut milk (canned, full fat)
  • 2 Tablespoons tamari or soy sauce
  • 1/2 Tablespoon fish sauce (or additional soy sauce)
  • 1 Tablespoon lemongrass paste
  • 1 Tablespoon green curry paste
  • 1/2 Tablespoon coriander
  • 1 teaspoon ginger powder
  • 1/2 teaspoon red chili flakes
  • 35 thai chiles, optional for extra spice

Method

  1. Place chicken thighs into the crockpot.
  2. Combine other ingredients in a large bowl and whisk together to combine. Pour into the crockpot.
  3. Cook on low heat for 2 hours. Remove chicken thighs, saving the liquid from the crockpot if desired. Shred the chicken.
  4. Serve on tortillas, in sandwiches, with rice or lettuce wraps if you want to keep it lower carbs/cals. Remeber to add the extra cals on for what ever you decide to add. Enjoy!!!
