Curried Tuna and Sweetcorn Salad

Ingredients

  • 1 Tuna tin (in water or brine)
  • 1/2 Tin Sweetcorn
  • 1 tbsp Total greek yogurt
  • 1 cup Spinach
  • 1 tsp Curry Powder
  • 1 tbsp Red pepper chopped
  • 1/2 lemon juice little dash olive oil

Method

  1. In a bowl, mix the tuna, yogurt and sweetcorn.
  2. Spoon your tuna mixture into a serving bowl or plate, add your spinach and pepper and dress with a dash olive oil and lemon juice. I love this as a super quick and easy dish!
