White fish and herbs

Ingredients

  • 3 fillets of white fish (cod, sea bass or haddock)
  • Mixed herbs of choice (my favourite are basil, rosemary and thyme)
  • Juice of 1 lemon
  • 1 clove garlic minced
  • 1 tsp olive oil or coconut oil melted
  • 28g cashews
  • 6 cups Spinach wilted
  • 100g broccoli steamed

Method

  1. Pre heat your oven at 200 degrees.
  2. Moisten the fish with lemon juice and season with S&P.
  3. Mix together the herbs, garlic and oil and spread over fish.
  4. Bake skin side down for 12-15 minutes depending on the fishes thickness.
  5. Roast your cashews in the oven for 5 minutes.
  6. Serve your fish with your greens and sprinkle the cashew over the greens.

I always keep my extras in a food container for the next day low carb meal or snack!
